I finally managed to clear a space on the kitchen worktop to do some baking. Woohoo!
And this recipe from Allie In Londonland looked very promising.
I had to nip out in awful weather as I didn't have any bananas in, but I did manage to use up the dried unsulphered apricots which I had lying around for that seemed like a store cupboard eternity.
I'm afraid it didn't last as long as it should have done and I made a double batch with sultanas in later in the day which I have been eating for breakfast all week.
